1 Cup of Quinoa
1(15oz) can of Black Beans drained and rinsed
1(15oz) can of sweet corn drained
1 jar of roasted red bell peppers drained
1(3oz approx) can of green chilies drained
¼ cup of chopped cilantro
3 Tbsp. lime juice
2 Tbsp. olive oil
2 tsp. ground cumin
Medium container of pico de gallo(store bought or homemade)
drained or not
Cook quinoa according to the package directions.
Combine beans, corn, red bell pepper, chilies, and cilantro in a large bowl.
Stir in quinoa.
Combine lime juice, oil and cumin in small bowl.
Toss with quinoa mixture.
Season with salt and pepper to taste.
Top with pico de gallo. Serve warm or chilled.
