1 head lettuce (Arizona Iceberg preferably) cored and rinsed

½ cup cider vinegar

2 Tbsp. sugar

1 Tbsp. flour

½ tsp. dry mustard

¼ tsp. salt

2 eggs, beaten

2 Tbsp. heavy cream

Sliced tomatoes, optional


Chill lettuce in plastic bag. Boil vinegar, set aside. Mix sugar, flour, mustard and salt in a bowl. Add eggs, stir in a little of hot vinegar, then add mixture to remaining vinegar. Cook over low heat, stirring constantly until thickened, about 5 minutes. Sitr in cream and chill. At serving time, shred lettuce and put in a bowl or serve as a wedge and pour dressing over all. If desired, serve with sliced tomatoes. Makes 6 servings. Arizona lettuce has a texture which makes a delicious lettuce slaw.
